What are tannins?

Tannins can be found in the stems and seeds of grapes, in teas and even in tree bark. The scientific definition of tannins is the phenolic compound which triggers proteins. When this occurs in wine, it gives off an extremely bitter taste. Some research has found that tannins affect the digestive process, causing a feeling of fullness. Depending on how grapes are crushed in the early stages of wine making can determine the strength of tannins. Tannins are prominent in young red wines, but become less severe as the wine ages. Tannins also aid in the aging process in red wines.
